The intrinsic characteristics of all types of honey (chemical, physical and organoleptic) are determined by two factors: the producer bees and the flowers they have visited. *Honeydew Honey: Which is also sometimes called forest honey, does not come from nectar, but from another type of vegetable juices and the secretions of other insects that the bee uses. It is very rich in melicitose, and has more minerals and aminoacids than normal honey. *Polyflower Honey: This honey comes from the nectar of different vegetable species (at least two), none of which are predominant over the others. What characterises this honey are the types of pollen that are found in the areas it comes from. *Monofloral Honey: On the contrary to the previous one, this honey is produced mostly from the pollen of one type of flower, although it also contains varying amounts of other plants.
